Gluten Free Stuffed Pork Chops

Easy to make, these chops taste as good as any restaurant dish – tendy and juicy!

Equipment

  • Cast Iron Skillet
  • Toothpicks

Ingredients
  

  • 2 thick cut pork chops
  • 1/2 cup gluten free bread crumbs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 5 tbsp melted butter, divided
  • 1/2 yellow onion, chopped
  • 1 tsp Italian seasoning
  • 1-2 cups beef broth, enough to cover pork chops half way

Instructions
 

  • Cut slits lengthwise in fat end of pork chops, creating a pocket for the stuffing.
  • Combine 3 tbsp melted butter, bread crumbs, chopped onion, salt, pepper and Italian seasoning.
  • Stuff pork chops with stuffing and place toothpicks through chops to hold stuffing in.
  • Place remaining butter in skillet and heat over medium heat. Brown pork chops for 5 minutes each side.
  • Add enough beef broth so pork chops are covered half way, and low simmer uncovered for 30 minutes or until tender, turning over at least once during cooking. You may also baste the chops with some of the broth while simmering.
  • Remove pork chops before serving. Serve with pan juices.

Notes

We use gluten free bread crumbs but you can use bread crumbs of your choice.  Flavored bread crumbs such as Italian or garlic are good !
