

Breakfast Pudgy Pie
Scrambled eggs, hash browns, onions, cheese and bacon
Equipment
- Pudgy pie iron
Ingredients
- 2 slices white bread OR use bread of your choice
- 1 1/2 pcs frozen hashbrown patties, thawed OR use leftover hashbrowns if you like
- 1 scrambled egg
- 1 slice Cheddar or American cheese
- 1 tbsp chopped onion
- 2 slices cooked bacon OR cooked sausage, crumbled
Instructions
- Spray both sides of pie iron with oil
- Butter one side of each slice of bread
- Place one slice of bread into pie iron, buttered side down
- Place hashbrowns on top of bread
- Add remaining ingredients, in any order
- Top with remaining bread slice, buttered side up
- Close pie iron and place over hot coals or wood fire
- Check every 2-3 minutes until one side is toasted
- Flip and cook on other side until done
Notes
We usually use leftover hash browns for this recipe, but if you don’t have any then the frozen patties will work. Just make sure to thaw them out ahead of time. And of course, as with any pudgy pie recipe, you can use any kind of cheese that you like!
