

Pierogi of Sorts
Lefse (potato flatbread) filled with mashed potatoes, cheese and onions.
Equipment
- 1Pudgy Pie Iron
Ingredients
- 1-2 slices lefse potato bread; one slice may be large enough to fold over filling
- 1/2 cup prepared mashed potatoes
- 1-2 tbsp chopped onion
- shredded cheddar cheese
Instructions
- Spray pudgy pie iron with oil
- Place one slice of lefse bread into pie iron
- Top bread with mashed potatoes
- Add remaining ingredients on top of the mashed potatoes
- If lefse slice is large enough, fold over the top of the filling. If not, add another piece of lefse on top
- Close pie iron, and trim extra bread that may be extending outside of the pie iron
- Cook over hot coals or fire until toasted on both sides
- Let cool before eating – filling will be very hot!
Notes
I found this lefse bread by chance while shopping for some other pudgy pie ingredients. This recipe reminds me very much of potato pierogies, thus the name – Pierogi of sorts!
