

Grilled Marinated Portobello Mushroom Caps
A great substitute for a burger! We have these sometimes for our "meatless" day.
Equipment
- Portable gas grill or charcoal grill
Ingredients
- 4 large portobello mushroom caps
- 1/4 cup low-sodium soy sauce
- 2 tbsp balsamic vinegar
- 2 cloves minced garlic
- 1 tsp chopped ginger
- 4 slices provolone or swiss cheese
- 4 hamburger buns
- thinly sliced red onions
Instructions
- Mix together soy sauce, vinegar, garlic and ginger
- Place mushrooms in glass container. Add marinade over the top.
- Marinate mushrooms for 5-10 minutes, no longer. You may want to spoon some of the marinade over the mushrooms if it doesn't completely cover them.
- Heat grill to medium-high heat
- Cook mushrooms 5-6 minutes per side, or until cooked through
- During the last 1-2 minutes of cooking, add cheese and close grill cover until cheese is melted
- Serve on toasted buns with red onions, and lettuce and tomato if desired
Notes
Use your favorite type of bun; we prefer sesame seed buns for this recipe, but brioche are good also.
