Grilled Marinated Portobello Mushroom Caps

A great substitute for a burger! We have these sometimes for our "meatless" day.

Equipment

  • Portable gas grill or charcoal grill

Ingredients
  

  • 4 large portobello mushroom caps
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp balsamic vinegar
  • 2 cloves minced garlic
  • 1 tsp chopped ginger
  • 4 slices provolone or swiss cheese
  • 4 hamburger buns
  • thinly sliced red onions

Instructions
 

  • Mix together soy sauce, vinegar, garlic and ginger
  • Place mushrooms in glass container. Add marinade over the top.
  • Marinate mushrooms for 5-10 minutes, no longer. You may want to spoon some of the marinade over the mushrooms if it doesn't completely cover them.
  • Heat grill to medium-high heat
  • Cook mushrooms 5-6 minutes per side, or until cooked through
  • During the last 1-2 minutes of cooking, add cheese and close grill cover until cheese is melted
  • Serve on toasted buns with red onions, and lettuce and tomato if desired

Notes

Use your favorite type of bun; we prefer sesame seed buns for this recipe, but brioche are good also.
