Grilled Marinated Portobello Mushroom Caps
A great substitute for a burger! We have these sometimes for our "meatless" day.

Portable gas grill or charcoal grill
Ingredients
4
large portobello mushroom caps
1/4
cup
low-sodium soy sauce
2
tbsp
balsamic vinegar
2
cloves
minced garlic
1
tsp
chopped ginger
4
slices
provolone or swiss cheese
4
hamburger buns
thinly sliced red onions
Instructions
Mix together soy sauce, vinegar, garlic and ginger
Place mushrooms in glass container. Add marinade over the top.
Marinate mushrooms for 5-10 minutes, no longer. You may want to spoon some of the marinade over the mushrooms if it doesn't completely cover them.
Heat grill to medium-high heat
Cook mushrooms 5-6 minutes per side, or until cooked through
During the last 1-2 minutes of cooking, add cheese and close grill cover until cheese is melted
Serve on toasted buns with red onions, and lettuce and tomato if desired
Notes
Use your favorite type of bun; we prefer sesame seed buns for this recipe, but brioche are good also.
