
Jambalaya Skewers
Cajun spiced shrimp and andouille sausage, crisp peppers and onions grilled and served over rice with tomatoes. Jambalaya with a smoky grilled flavor.

Ingredients
- 1 lb wild-caught shrimp, peeled and deveined
- 4 cajun style andouille sausage, cut into 1/2 inch pieces I use Aidells brand
- 2 green bell peppers, cut into 1 inch pieces
- 1 large yellow or white onion, cut into chunks
- 1 tbsp olive oil
- 4 tbsp melted butter
- 2 tsp "Slap Ya Mama" cajun seasoning
- 1 tsp garlic powder
- 2 servings white rice, prepared
- 1 14.5 oz can diced tomatoes Use flavored tomatoes if preferred, such as garlic or spicy red pepper
Instructions
- Thaw shrimp if frozen. Pat dry.
- In a large bowl, mix melted butter, cajun seasoning and garlic powder. Add shrimp and toss to coat.
- Toss pieces of peppers and onions with olive oil. NOTE: If you prefer the vegetables to be a little less crisp, they can be softened in the microwave before grilling. Use 1 tbsp melted butter and add peppers and onion, microwave 2-3 minutes to soften. If you don't have electrical hookups, soften in a skillet over medium-low heat for several minutes.
- Thread shrimp, sausage, peppers and onions onto skewers.
- Heat grill to medium temperature.
- Place skewers on grill and cook 3-4 minutes. Flip skewers over and grill an additional 3-4 minutes, or until shrimp or opaque.
- Prepare white rice and add the canned, diced tomatoes, heating through.
- Serve skewers over the rice.
Notes
These are pretty easy to make. If you don’t have “Slap Ya Mama” brand cajun seasoning, then 1) I recommend you find some and 2) in the meanwhile, you may substitute another brand, I suppose.
