Jambalaya Skewers

Cajun spiced shrimp and andouille sausage, crisp peppers and onions grilled and served over rice with tomatoes. Jambalaya with a smoky grilled flavor.

Equipment

  • Bamboo Skewers

Ingredients
  

  • 1 lb wild-caught shrimp, peeled and deveined
  • 4 cajun style andouille sausage, cut into 1/2 inch pieces I use Aidells brand
  • 2 green bell peppers, cut into 1 inch pieces
  • 1 large yellow or white onion, cut into chunks
  • 1 tbsp olive oil
  • 4 tbsp melted butter
  • 2 tsp "Slap Ya Mama" cajun seasoning
  • 1 tsp garlic powder
  • 2 servings white rice, prepared
  • 1 14.5 oz can diced tomatoes Use flavored tomatoes if preferred, such as garlic or spicy red pepper

Instructions
 

  • Thaw shrimp if frozen. Pat dry.
  • In a large bowl, mix melted butter, cajun seasoning and garlic powder. Add shrimp and toss to coat.
  • Toss pieces of peppers and onions with olive oil. NOTE: If you prefer the vegetables to be a little less crisp, they can be softened in the microwave before grilling. Use 1 tbsp melted butter and add peppers and onion, microwave 2-3 minutes to soften. If you don't have electrical hookups, soften in a skillet over medium-low heat for several minutes.
  • Thread shrimp, sausage, peppers and onions onto skewers.
  • Heat grill to medium temperature.
  • Place skewers on grill and cook 3-4 minutes. Flip skewers over and grill an additional 3-4 minutes, or until shrimp or opaque.
  • Prepare white rice and add the canned, diced tomatoes, heating through.
  • Serve skewers over the rice.

Notes

These are pretty easy to make. If you don’t have “Slap Ya Mama” brand cajun seasoning, then 1) I recommend you find some and 2) in the meanwhile, you may substitute another brand, I suppose.
