Stuffed French Toast Pudgy Pie
French toast stuffed with fruit and cream cheese filling

Ingredients
2
slices
brioche bread
1
oz
cream cheese
2
tbsp
powdered sugar
Plus extra for sprinkling on top
2-4
fresh strawberries, sliced thin
1
large egg
2
tbsp
milk
1/2
tsp
vanilla
1/2
tsp
ground cinnamon
1/4
tsp
nutmeg
Instructions
Spray both sides of pie iron with oil
Mix together cream cheese and powdered sugar
Whisk together egg, milk, cinnamon, vanilla and nutmeg
Dip one side of each piece of brioche bread into egg mixture
Place one piece of bread, egg side down, into pie iron
Spread cream cheese mixture on top of bread
Add strawberries on top of cream cheese
Top with other piece of bread, egg side up
Close pie iron and cook over hot coals or fire until toasted (continue to check every couple of minutes until each side is done)
Sprinkle with powdered sugar, if desired, or top with maple syrup
Let cool before eating - filling will be very hot!
Notes
The amount of strawberries to use is totally up to you. I use whatever will fit nicely in the pie iron!
